After having spent over 30 years as a pastry chef in patisseries and hotels including the Ritz Carlton Hotel in Sydney and the Dorchester Hotel in London, Bill set up a wedding cake and handmade chocolate business supplying premium venues throughout Sydney. For his soon to be married couples, he insists on providing the highest profesional service at a personal level.
Bill just loves experimenting with delicious Belgian couverture chocolate to customise a design. He has a talent for sculpting sugar iced cakes, and is equally at home working with buttercream and flavoured ganache.
Sweet Connoisseur has expanded through word of mouth and is a preferred supplier to a number of premier wedding and event venues in Sydney including Sergeants' Mess, The Gunners' Barracks, The Tea Room QVB, The Taronga Centre, Athol Hall, Cropley House, Long Reef Golf Club, Ryde Parramatta Golf Club and Killara Golf Club.
